Torq’s Matt Hart explains: “Understanding the speed at which different carbohydrate foods raise blood sugar is extremely important to the athlete. A high glycaemic index (GI) carbohydrate shortly before exercise could actually drop your energy levels like a stone just before you start your ride. Similarly, a low GI carbohydrate during exercise may not get into your bloodstream quick enough to have a significant effect.
