In the last Torq Teaser, Torq’s Matt Hart asked whether the glycaemic index of fructose, as often found in fruit, was low or high. It’s got a GI of 23, apparently, which puts it firmly in the “low” category. Matt says, “This is because fructose has to be processed by the liver and converted into glucose before it can be used as an energy source – and this takes time. Useful to know if you’re designing a Sports Nutrition product though!”
